Ingredients
• 3 large eggs
• 1 tsp turmeric powder
• 1 tbsp butter
• 1 cup baby spinach
• ½ tsp chilli flakes
• ¼ tsp ground black pepper
• Pinch of salt
Method
1. Whisk eggs: Crack eggs into a bowl. Add turmeric, black pepper, and salt. Whisk until fully combined.
2. Heat butter and chilli: Melt butter in a non-stick pan over medium-low heat. Add chilli flakes and toast for 30 seconds.
3. Scramble: Pour in the egg mixture. Gently fold from the edges inward. Cook low and slow for about 3 minutes.
4. Add spinach and serve: When eggs are almost set, fold in spinach. Remove from heat and serve immediately.
Tip: Low and slow is the key — pull off just before fully set. Residual heat finishes the cook.
