Collagen Cupcakes with Lemon Icing

Light, fluffy cupcakes infused with collagen and zesty lemon, topped with creamy lemon-honey icing. A delicious, feel-good vegetarian treat!

Ingredients:

  • 1 scoop Kitchen Ready Collagen
  • 1 cup self-raising flour
  • ½ cup almond meal
  • ½ cup sugar or honey
  • 2 eggs
  • ½ cup almond milk
  • Zest of 1 lemon

Icing:

  • ½ cup cream cheese
  • 2 tbsp honey
  • Juice of ½ lemon

Instructions:
Mix dry ingredients with collagen. Whisk wet ingredients separately. Combine, pour into cupcake cases, and bake at 180°C for 18–20 mins. Cool before icing.
