Spring Garden Collagen Soup

Ingredients:

  • 1 scoop Kitchen Ready Collagen
  • 1 tbsp olive oil
  • 1 leek, sliced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 cup peas
  • 1.5L veggie stock
  • Handful fresh parsley

Instructions:
Sauté leek, carrot, and zucchini in olive oil for 5 mins. Add stock, peas, and collagen. Simmer 15 mins. Blend half for creaminess, then stir through parsley.
