Velvety Cauliflower & Turmeric Purée Soup
Light, creamy, and nourishing from the very first spoonful. This comforting blend is easy on the gut and gentle on the skin.
Ingredients (Serves 4):
• 1 tbsp olive oil
• 1 leek or onion, chopped
• 2 garlic cloves, minced
• 1 medium cauliflower, chopped
• 1 tsp Organic Turmeric Powder
• 500ml vegetable stock
• 100ml almond milk (or regular milk)
• Salt & pepper to taste
• Optional: squeeze of lemon for brightness
Instructions:
1. Sauté leek/onion and garlic in olive oil. Add organic turmeric powder and stir.
2. Add cauliflower and stock. Simmer for 15–20 mins until tender.
3. Blend until very smooth. Stir through milk and season.
4. Add lemon juice just before serving if desired.
