- INGREDIENTS
- 1 cups jasmine or short-grain white rice
- 8 cups chicken or vegetable stock
- 1 tablespoons organic turmeric powder
- 2 tablespoons fresh ginger, peeled and minced
- 3 garlic cloves, minced
- 1 tablespoons sesame oil
- 1 teaspoons sea salt
- 0.3 teaspoons cracked black pepper
- 2 spring onions, sliced, for garnish
- 2 soft-boiled eggs, halved (optional)
STEPS
1. Rinse the rice: Rinse 1 cups jasmine or short-grain white rice under cold water until the water runs mostly clear. Drain well.
2. Sauté the aromatics: Heat 1 tablespoons sesame oil in a large pot over medium heat. Add 2 tablespoons fresh ginger, peeled and minced and 3 garlic cloves, minced and sauté for 1-2 minutes until fragrant.
3. Add stock and rice: Pour in 8 cups chicken or vegetable stock and add the rinsed rice. Stir in 1 tablespoons organic turmeric powder, 1 teaspoons sea salt and 0.3 teaspoons cracked black pepper.
4. Simmer low and slow: Bring to a boil, then reduce to a gentle simmer. Cover partially and cook, stirring occasionally to prevent sticking, until the rice breaks down into a thick, creamy porridge.
5. Adjust consistency: If the congee is too thick, stir in a splash of extra stock or hot water until it reaches your preferred consistency. Taste and adjust salt.
6. Serve: Ladle into bowls and top with 2 spring onions, sliced, for garnish and 2 soft-boiled eggs, halved (optional) if using. Serve hot.
NOTES
For a deeper flavour, use a bone broth-style stock. Vegan version: use vegetable stock and skip the egg garnish, top with crispy tofu or chilli oil instead.
