Ingredients
• 4 – 6 eggs
• ½ small onion finely chopped
• 2 teaspoons turmeric powder
• 1 teaspoon butter (room temperature)
• 1 – 2 tablespoons mayonnaise or plain yoghurt
• 1 mild chilli chopped (optional)
• pinch of pepper
• large iceberg lettuce leaves
• fresh sandwich bread
Instructions
STEP 1.
Boil eggs so they are soft, but no longer runny in the middle.
STEP 2.
Peel and mash the eggs with butter and pepper. Add in raw onion and chilli, then add mayonaise so the mixture is spreadable.
STEP 3.
Spread over fresh bread and add lettuce, ready to serve.
