Golden Glow Turmeric Almond Cookies

Ingredients (Makes 12–14 cookies)
- 1½ cups almond meal
- ½ cup coconut flour
- ½ tsp baking soda
- 1½ tsp Turmeric Australia Turmeric Powder
- 1 tsp cinnamon
- Pinch of sea salt
- ⅓ cup coconut oil or olive oil, melted
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- 1 egg (or flax egg for vegan version)
Optional:
- ¼ cup chopped walnuts or pistachios
- 1 tbsp dark choc chips or cacao nibs
- Pinch of black pepper (to enhance curcumin absorption)
Instructions:
- Preheat oven to 170°C and line a baking tray with baking paper.
- In a large bowl, whisk almond meal, coconut flour, baking soda, turmeric, cinnamon, and salt.
- In another bowl, combine coconut oil, maple syrup, vanilla, and egg. Whisk well.
- Add wet ingredients to dry. Mix until a dough forms. Stir in nuts or choc chips if using.
- Scoop tablespoon-sized portions onto tray and flatten slightly.
- Bake for 12–14 minutes or until lightly golden around the edges.
- Let cool fully (they firm up as they cool!) and store in an airtight jar.
