Golden Glow Turmeric Almond Cookies

Ingredients (Makes 12–14 cookies)

  • 1½ cups almond meal

  • ½ cup coconut flour

  • ½ tsp baking soda

  • 1½ tsp Turmeric Australia Turmeric Powder

  • 1 tsp cinnamon

  • Pinch of sea salt

  • ⅓ cup coconut oil or olive oil, melted

  • ¼ cup maple syrup or honey

  • 1 tsp vanilla extract

  • 1 egg (or flax egg for vegan version)

Optional:

  • ¼ cup chopped walnuts or pistachios

  • 1 tbsp dark choc chips or cacao nibs

  • Pinch of black pepper (to enhance curcumin absorption)

Instructions:

  1. Preheat oven to 170°C and line a baking tray with baking paper.

  2. In a large bowl, whisk almond meal, coconut flour, baking soda, turmeric, cinnamon, and salt.

  3. In another bowl, combine coconut oil, maple syrup, vanilla, and egg. Whisk well.

  4. Add wet ingredients to dry. Mix until a dough forms. Stir in nuts or choc chips if using.

  5. Scoop tablespoon-sized portions onto tray and flatten slightly.

  6. Bake for 12–14 minutes or until lightly golden around the edges.

  7. Let cool fully (they firm up as they cool!) and store in an airtight jar.
