Golden Veggie Soup

A silky, golden bowl of comfort that’s perfect for those in-between spring days. This turmeric-spiced pumpkin and lentil soup is hearty yet light, giving you warmth without weighing you down. It’s a nourishing way to reset, soothe digestion, and add an anti-inflammatory boost to your meals.

Ingredients

  • 1 tsp turmeric powder

  • 2 cups pumpkin, diced

  • Β½ cup red lentils

  • 1 onion, chopped

  • 2 garlic cloves

  • 1 L vegetable stock

Instructions

  1. SautΓ© onion and garlic until fragrant.

  2. Add pumpkin, lentils, and stock. Simmer for 20 minutes until tender.

  3. Blend smooth, then stir in turmeric before serving.
