Prep / Cook / Total - 5 / 60 / 65min
Ingredients
• 40 gram dried shiitake mushrooms,
stalks removed after soaking
• 1 cup (250ml) boiling water
• 1 tablespoon vegetable oil
• 2 onions, sliced
• 2 clove garlic, crushed
• 1 teaspoon turmeric
• 2 cinnamon sticks
• 750 gram blade steak, sliced
• 400 ml can coconut cream
• 2 tablespoon fish sauce
• 1 tablespoon brown sugar
• crushed peanuts, to serve
Instructions
Step 1. Place mushrooms in a heatproof bowl with boiling water. Stand for 15 minutes. Drain, but keep liquid. Halve mushrooms and remove stalks.
Step 2. Heat oil in a large, heavy-based saucepan on medium. Saute onions, garlic, turmeric and cinnamon sticks for 2-3 minutes.
Step 3. Add steak and mushrooms. Cook, stirring, for 2-3 minutes, until beef has browned. Stir in coconut cream, 1/2 cup mushroom liquid, fish sauce and sugar.
Step 4. Bring to the boil. Reduce heat and simmer for 50-60 minutes, until sauce is thick and meat is tender. If sauce becomes too thick, stir in remaining mushroom liquid. Top with peanuts and serve.
