Turmeric Rice

• 2 tablespoons butter
• 1⁄2 chopped white onion
• 1 minced garlic clove
• 1 cup basmati rice
• 1 tablespoon turmeric (fresh or paste)
• 1 1⁄2 cups chicken broth
• 1 bay leaf
• 1 sprig thyme
• salt and pepper
Instructions
STEP 1
Melt 1 tablespoon of butter in saucepan. Add onion and garlic and cook until softened.
STEP 2
Add rice and turmeric; stir to coat. Add remaining ingredients, bring to boil, cover and simmer 15-20 minutes.
STEP 3
Stir in remaining butter, remove bay leaf and serve.

“Saute diced capiscum, shallots and mushrooms. Add in diced cooked chicken. Open a can of coconut cream and stir in 1 tsp of chilli paste. Pour over the ingredients in the pan. Simmer and serve on a bed of turmeric rice. So easy and my family love it.”
