- 1 cup cooked quinoa
- 1 cup mixed greens (rocket, spinach, or kale)
- ½ cup roasted beetroot, sliced
- ½ cup cherry tomatoes, halved
- 2 tbsp olive oil
- Juice of ½ lemon
- 1 tbsp pomegranate seeds (optional, for garnish)
