A nourishing and colourful salad that brings together earthy quinoa, leafy greens, beetroot, and a turmeric-lemon dressing. Perfect for a light yet satisfying meal.

Turmeric Quinoa Salad

Ingredients

  • 1 tsp turmeric powder
  • 1 cup cooked quinoa
  • 1 cup mixed greens (rocket, spinach, or kale)
  • ½ cup roasted beetroot, sliced
  • ½ cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Juice of ½ lemon
  • 1 tbsp pomegranate seeds (optional, for garnish)
  • Dollop of Greek yoghurt (optional, for creaminess)

Instructions

  1. Toss quinoa, greens, beetroot, and tomatoes in a large bowl.
  2. Whisk turmeric, lemon juice, and olive oil to create the dressing.
  3. Pour dressing over the salad and toss gently.
  4. Garnish with pomegranate seeds and yoghurt, if desired.
