Turmeric Cauliflower Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 large cauliflower, chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Sauté the Aromatics:
    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onion is soft and translucent, about 5 minutes.
  2. Add Turmeric and Cauliflower:
    Stir in the ground turmeric and chopped cauliflower. Cook for another 5 minutes, stirring occasionally.
  3. Add Broth:
    Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 15 minutes, or until the cauliflower is tender.
  4. Blend the Soup:
    Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  5. Add Coconut Milk:
    Stir in the coconut milk and cook for another 5 minutes.
  6. Season and Serve:
    Season with salt and pepper to taste. Ladle the soup into bowls and garnish with fresh parsley if desired.
