Golden Chickpea & Quinoa Rainbow Bowl

This bowl is everything your body loves in summer: colour, crunch, plant protein, and a golden turmeric kick. It’s satisfying without feeling heavy — perfect for lunch on a hot day.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup chickpeas
  • ½ tsp turmeric powder
  • 1 small sweet potato, sliced and roasted with turmeric
  • ½ cup shredded red cabbage
  • 1 cup rocket
  • 1 avocado, halved
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Salt & pepper

Dressing (optional):

  • 1 tbsp tahini
  • 1 tsp lemon juice
  • 1 tsp honey
  • 1 tbsp water
  • Pinch turmeric

Method

  1. Toss sweet potato slices with oil, turmeric, salt and roast at 200°C for 20 minutes.
  2. Season chickpeas with turmeric, salt and pepper.
  3. Assemble bowl with quinoa, chickpeas, cabbage, rocket, tomatoes, sweet potato and avocado.
  4. Drizzle dressing over the top, if using.
