Golden Chickpea & Quinoa Rainbow Bowl
This bowl is everything your body loves in summer: colour, crunch, plant protein, and a golden turmeric kick. It’s satisfying without feeling heavy — perfect for lunch on a hot day.

Ingredients
- 1 cup cooked quinoa
- 1 cup chickpeas
- ½ tsp turmeric powder
- 1 small sweet potato, sliced and roasted with turmeric
- ½ cup shredded red cabbage
- 1 cup rocket
- 1 avocado, halved
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
- Salt & pepper
Dressing (optional):
- 1 tbsp tahini
- 1 tsp lemon juice
- 1 tsp honey
- 1 tbsp water
- Pinch turmeric
Method
- Toss sweet potato slices with oil, turmeric, salt and roast at 200°C for 20 minutes.
- Season chickpeas with turmeric, salt and pepper.
- Assemble bowl with quinoa, chickpeas, cabbage, rocket, tomatoes, sweet potato and avocado.
- Drizzle dressing over the top, if using.
