Turmeric Grilled Salmon with Summer Veggie Medley

This is summer on a plate — tender grilled salmon, bright veggies, a squeeze of lemon, and a subtle golden glow of turmeric. Light, fresh and incredibly nourishing, it’s the kind of dish you can whip up midweek and still feel like you’re eating something special.

Ingredients

For the salmon:

  • 2 salmon fillets
  • 1 tsp turmeric powder
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp cracked black pepper
  • Lemon slices, to serve

For the veggie medley:

  • 1 cup sweetcorn
  • 1 cup chopped capsicum
  • 1 carrot, thinly sliced
  • 2 tbsp chopped parsley
  • 1 tbsp olive oil
  • ½ tsp turmeric powder
  • Salt & pepper, to taste

To serve:

Cooked jasmine or basmati rice

Method

  1. Preheat a grill pan or BBQ.
  2. Mix olive oil, turmeric, garlic powder, salt, and pepper. Coat salmon evenly.
  3. Grill salmon 3–4 minutes per side until lightly charred and cooked to your liking.
  4. In a pan, sauté veggies with olive oil and turmeric for 3–4 minutes until just softened.
  5. Plate rice, top with salmon and veggies, and finish with fresh lemon.
