Collagen-Infused Lemon Herb Chicken Bowl

This fresh, nourishing Lemon Herb Chicken Bowl is loaded with lean protein, colourful veg, healthy fats—and a sneaky scoop of Kitchen Ready Collagen Protein Powder to support muscle repair, gut lining integrity, and skin glow. Ingredients (Serves 2):

For the Chicken:

  • 2 small chicken breasts

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp garlic powder

  • ½ tsp dried oregano

  • Salt + pepper to taste

For the Collagen Dressing:

  • 2 tbsp Greek yoghurt (or coconut yoghurt)

  • 1 scoop (approx. 10g) Kitchen Ready Collagen Protein Powder

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tbsp water (to thin if needed)

  • Salt + pepper to taste

For the Bowl:

  • 1 cup cooked quinoa or brown rice

  • ½ avocado, sliced

  • 1 cup baby spinach or rocket

  • ¼ cucumber, sliced

  • 1 small carrot, grated

  • Fresh parsley (optional)

Instructions:

  1. Marinate the chicken: Combine olive oil, lemon juice, garlic powder, oregano, salt and pepper. Coat chicken and let it marinate for at least 15 minutes.

  2. Cook chicken: Grill or pan-sear chicken until golden and fully cooked. Slice into strips.

  3. Make the collagen dressing: Whisk all dressing ingredients together until smooth.

  4. Assemble the bowls: Start with quinoa or rice, then layer on the greens, veggies, avocado, and sliced chicken.

  5. Drizzle with collagen dressing and sprinkle with parsley. Serve fresh.
