Turmeric Rosemary Lamb Chops with Garlic Herb Sauce

Ingredients (Serves 4)

For the herb sauce:

  • ½ cup fresh parsley
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 tsp lemon zest
  • Pinch of sea salt

Instructions

  1. Marinate lamb: Mix oil, turmeric, garlic, lemon, salt, and pepper. Coat lamb and rest 30 mins.
  2. Cook lamb: Heat grill or pan to medium-high. Add rosemary sprigs. Cook chops 3–4 mins per side (medium-rare) or to preference. Rest for 5 mins.
  3. Make sauce: Blend parsley, olive oil, garlic, lemon zest, and salt into a paste.
  4. Serve: Plate lamb with a spoon of herb sauce and a side of roast veggies or salad.
