One Pan Golden Turmeric Chicken with Mediterranean Veggies

Ingredients (Serves 4)

2 large chicken breasts
-
1 tbsp olive oil
-
½ tsp smoked paprika
-
1 garlic clove, minced
-
Juice of ½ lemon
-
1–2 sprigs fresh rosemary
-
Salt & pepper, to taste
Veggie Tray:
-
1 zucchini, sliced into rounds
-
1 small eggplant, diced
-
1 red capsicum, chopped
-
1 yellow capsicum, chopped
-
1 cup cherry tomatoes (whole)
-
½ red onion, sliced
-
1 tbsp olive oil
-
Extra turmeric, salt & pepper
Instructions:

Preheat oven to 200°C (fan forced).
Lightly oil a large baking tray or roasting pan. -
Marinate the chicken:
In a small bowl, mix olive oil, turmeric powder, paprika, garlic, lemon juice, salt and pepper. Rub mixture over the chicken breasts. Let sit for 10 minutes. -
Prep the veggies:
In a separate bowl, toss all vegetables with olive oil, a pinch of turmeric, salt, and pepper. Spread evenly into the tray. -
Assemble and roast:
Place chicken breasts on top of the veg. Lay rosemary sprigs over the top. Roast uncovered for 30–35 minutes, or until chicken is golden and cooked through, and vegetables are tender. -
Serve with:
A wedge of lemon, fresh herbs, and optionally brown rice or crusty sourdough.
