Ingredients (Serves 2)

  • 1 cup cooked couscous
  • 1 tsp Turmeric Australia Organic Turmeric Powder
  • ½ cup cooked chickpeas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ cup black olives, sliced
  • 1 tbsp olive oil
  • Juice of ½ lemon
  • Salt & pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare couscous according to packet instructions. Stir in turmeric, olive oil, salt, and pepper. Fluff with a fork.
  2. In bowls, arrange couscous, chickpeas, cucumbers, tomatoes, and olives.
  3. Drizzle with lemon juice and garnish with parsley.
  4. Serve immediately for a fresh, energising breakfast.
