Turmeric Spiced Chickpea and Veggie Wraps with Hummus

Ingredients (Makes 2 Wraps)

For the Chickpea Veggie Mix:

  • 1 tbsp olive oil

  • 1 cup canned chickpeas (drained and rinsed)

  • 1 zucchini, thinly sliced

  • 1 small carrot, grated

  • 1 cup red cabbage, shredded

  • ½ red capsicum, thinly sliced

  • ½ tsp Turmeric Australia Turmeric Powder

  • ¼ tsp ground cumin

  • Salt and pepper to taste

For the Hummus:

  • ½ cup plain hummus

  • Juice of ½ lemon

  • Optional: 1 garlic clove, minced

To Assemble:

  • 2 large wholegrain or gluten-free wraps

  • Handful of rocket or baby spinach

  • Optional toppings: pumpkin seeds, sprouts, avocado slices, or feta

Instructions:

  1. Sauté the chickpeas and veg:
    In a pan, heat olive oil over medium heat. Add chickpeas, zucchini, and capsicum. Season with turmeric, cumin, salt, and pepper. Cook for 6–7 minutes, stirring often, until veggies are tender and chickpeas are slightly golden. Remove from heat and stir in grated carrot and cabbage.

  2. Mix the hummus:
    In a small bowl, combine hummus, lemon juice, and garlic (if using). Stir until smooth and creamy.

  3. Assemble the wraps:
    Lay out wraps, spread with hummus, and top with rocket. Pile on the warm chickpea veggie mix, and add any optional toppings.

  4. Wrap & enjoy:
    Roll tightly, slice in half, and enjoy fresh or packed up for later.
