Creamy Pumpkin and Collagen Soup

When the weather’s gloomy, this silky pumpkin soup gives you something to smile about. It’s rich, comforting and spiked with warm spices to help support digestion and inflammation. Ingredients (Serves 2–3):

• 1 tbsp olive oil

• 1 small brown onion, diced

• 2 garlic cloves, minced

• 500g pumpkin, peeled and chopped

• 1 medium carrot, peeled and chopped

• 1 tsp ground cumin

• ½ tsp ground Organic Turmeric Powder

• 3 cups vegetable broth

• ½ cup coconut milk (optional)

• Sea salt & cracked pepper

• Fresh parsley or coriander

Instructions:

1. Sauté onion and garlic in olive oil.

2. Add pumpkin, carrot, cumin, Organic Turmeric Powder. Cook 3–4 mins.

3. Add broth, simmer 20 mins until soft.

4. Blend smooth, stir in coconut milk and collagen.

5. Simmer 2–3 mins, season and serve.
