Stuffed Capsicums with Collagen Quinoa

The colourful, comforting bake that loves your gut back. Perfect for meal prep or a vibrant dinner. Filled with a fibre-rich mix of quinoa, beans, veg and collagen.

Ingredients (Serves 2–3):

• 4 capsicums, halved

• 1 tbsp olive oil

• 1 onion, garlic

• 1 cup cooked quinoa

• ½ cup black beans

• ½ cup tomatoes

• ½ cup Kitchen Ready Collagen Powder

• Cumin, paprika, salt, pepper

• Optional cheese or nutritional yeast

Instructions:

1. Sauté onion and garlic. 

2. Stir in quinoa, beans, tomatoes, spices and collagen.

3. Fill capsicum halves. Top with cheese if using.

4. Bake 25–30 mins at 180°C.
