Minestrone with Collagen Boost

A veggie-loaded soup with a secret strength-building twist. Loaded with fibre, protein and vitamins, then supercharged with collagen.

Ingredients (Serves 2–3):

• 1 tbsp  olive oil

• 1 onion, carrot, zucchini (chopped)

• 2 garlic cloves

• 1 can diced tomatoes

• 4 cups veg broth

• ½ cup pasta

• 1 cup beans

• ½ cup Kitchen Ready Collagen Powder

• Italian herbs, salt, pepper

Instructions:

1. Sauté veg and garlic.

2. Add tomatoes, broth. Simmer 10 mins.

3. Stir in pasta and beans. Cook until tender.

4. Add collagen, season, serve.
