Spiced Red Lentil Collagen Stew

Ingredients (Serves 2–3):
• 1 tbsp coconut oil
• 1 onion, diced
• 2 garlic cloves, minced
• 1 tsp ginger
• 1 tsp cumin
• 1 tsp coriander
• ½ tsp cinnamon
• 1 cup red lentils
• 1 cup chopped tomatoes
• 3 cups vegetable stock
• 2 handfuls spinach
• Juice of ½ lemon
• ½ cup Kitchen Ready Collagen Protein
Instructions:
1. Sauté onion, garlic, and ginger.
2. Add spices, then lentils, tomatoes, and stock. Simmer 20 mins.
3. Add spinach, lemon, Kitchen Ready Collagen Protein.
4. Season and serve.
