Sweet Potato and Coconut Collagen Curry

Ingredients (Serves 2–3):
• 1 tbsp coconut oil
• 1 onion, diced
• 1 garlic clove
• 1 tsp ginger
• 1 tbsp curry powder
• 1 large sweet potato, cubed
• 1 can coconut milk
• 1 cup broth

• Salt & coriander
Instructions:
1. Sauté onion, garlic, ginger.
2. Stir in curry powder and sweet potato.
3. Add coconut milk and broth. Simmer 20 mins.
